KHACHAPURI


Khachapuri - Georgian pastries. We will prepare one type of khachapuri:  Adjaruli Khachapuri (აჭარული ხაჭაპური). 

Acharuli/Adjaruli khachapuri, in which the dough is formed into an open boat shape and the hot pie is topped with a raw egg and a pat of butter before serving.

A simple yeast dough is prepared for Khachapuri. Pour water into the mixer.

Add salt, a little sugar, a drop of vegetable oil and a small piece of yeast. Turn on the mixer.

Gradually add a tablespoon of flour. Add until the dough begins to separate from the walls.

Sprinkle the fingers with flour. We take out the dough from the mixer. Put in a bowl.

Sprinkle flour on top. Cover with a napkin. Do not wrap with cling film.

The dough should breathe. We put in a warm place. Let's get up.

Principle No. 1: The dough is supple!

 

The dough should be malleable, not very dense. Such a dough will be softer and more tender than dumplings or dumplings.

Cooking the filling. Take Georgian Suluguni cheese. It melts well. Block mozzarella for pizza belongs to the same group of cheeses.

Rub suluguni on a coarse grater. It is more convenient to rub the cheese that has just been taken from the refrigerator. Salt a little cheese.

Be sure to lay the egg that will connect the filling. Add flour and water. Mix. Roll up the filling in a com. Divide into two balls.

Preheat the oven to a maximum temperature (250, 280, 330 degrees).

Principle No. 2: Dough = filling (by weight)

Cheese and dough have different densities. With the same weight, the dough will be slightly larger in volume than the filling.

Cooking khachapuri in the form of a boat. Cover the baking sheet with parchment. Knead the dough with your hands.

Then we roll out the dough with a rolling pin from the center to the edges. Turn the tortilla over from time to time.

“Stroke” with flour. It should be a thin cake. Roll one edge of the dough into a roll until the middle of the cake. Then twist the opposite edge to the middle.

We fasten the rolls around the edges. Spread on a baking sheet. From the middle we roll the rolls back, forming a boat.

Evenly distribute the filling in the deepening of the dough. Put in the oven for 8-10 minutes.

 

 

We get the cake. Grease well with butter on top. Spread on a plate. We get a boat. Make a hole in the cheese.

Break the egg, put in the oven for one minute. The egg remained raw, but the squirrel grabbed a little. We stick pieces of butter between the filling and the dough.

Principle 3: Eat the boat right!

Mix the egg with cheese filling with a fork. Then we tear off the edges of the boat and dunk into the filling. Bon Appetit!
